Abstract

|
Chitin and chitosan are widely distributed over the world in nature and hydrolytic oligosaccharides from them have various biological function and possibility to apply in very wide fields including cosmetical, agricultural, and medicinal applications. For example, these oligosaccharides consisting of N-acetyl-D-glucosamine, or glucosamine of chitin and chitosan obtained from the processing of ocean waste chitinous materials are well known as materials for medical supplies, antifungal activity against infectious molds, antibacterial material and various physiological activities such as the anti-cancer and immune stimulating activities. This review describes the structure of the chitin and chitosan, molecule cloning of gene involving especially in chitin catabolic pathways, protein engineering, industrial processing, and as well as biotechnological and biological aspects of chitinolytic enzymes.
